What ABV Means and Why Brewers Care

Alcohol by volume is the percentage of pure ethanol in the finished beverage by volume. A 5 percent ABV beer contains 5 mL of ethanol in every 100 mL of beer. Knowing the ABV of every batch matters for far more than label accuracy: it tells you whether your fermentation finished cleanly, whether your yeast ran out of nitrogen or sugar, and whether the recipe behaved like the expected style. For homebrewers it is the headline number every batch is judged by, and for licensed brewers and winemakers it has direct legal and tax implications because excise duty in most countries is calculated on alcohol content.

Simple vs Advanced ABV Formulas

The simple formula ABV equals OG minus FG times 131.25 is the one most homebrew books quote because the math is easy and the answer is good enough for typical 1.040 to 1.060 worts. The advanced formula uses ABV equals 76.08 times OG minus FG divided by 1.775 minus OG, all multiplied by FG divided by 0.794, and corrects for the non-linear relationship between gravity drop and alcohol production at higher strengths. For a 1.090 imperial stout the advanced formula returns roughly half a percent more ABV than the simple version, and that gap matters for accurate label compliance, judging in competition, and tax reporting if you sell the beer.

Original and Final Gravity in Practice

Original gravity is read in a chilled wort sample just before pitching yeast. Use either a calibrated hydrometer or a refractometer, but always remember to correct the reading for temperature and, with a refractometer, for the wort correction factor. Final gravity is read after fermentation has fully stopped, which usually means 10 to 14 days for an ale and 4 to 6 weeks for a lager. Confirm the FG by reading the same value on two consecutive days because a beer that is still slowly fermenting will look done one day and drop a point the next. Hydrometers are the most reliable tool for FG readings because the alcohol present skews refractometer readings.

Apparent vs Real Attenuation

The attenuation number returned here is apparent attenuation, calculated from the change in specific gravity. Real attenuation is always a few points higher because the alcohol produced during fermentation is less dense than water and pulls the apparent gravity reading down. For practical brewing decisions apparent attenuation is what matters: it tells you how dry the beer finished and whether the yeast strain hit its expected range. Most clean ale strains land 72 to 80 percent, lagers a few points higher, and Belgian, saison, and brettanomyces strains can attenuate 85 to 100 percent, which is what gives those beers their characteristic dryness.
